Chia is a desert-growing member of the mint family known as Salvia Hispanica L.
Chia can be traced as a food as far back as 3500 B.C. and was part of the staple diet of the Aztec and Mayan civilisations. It was used as a food in many forms to fuel their gruelling physical activities, offered to their gods and used as a currency. Sadly when these civilisations disappeared in the 1500s, Chia disappeared too. Its resurgence started in the 1990s when a team of agricultural engineers were looking for alternative crops that might grow well in northwest Argentina; Chia was one. After analysing it, the team was staggered by the nutritional profile. It was at this point the re-emergence of the Chia seed began.
Through its incredibly rich nutritional profile, Chia can help to redress the imbalances that exist in our diets today; leading to a healthier life and greater feeling of well-being. Chia seeds come in black and white varieties which have equal nutritional properties, the only difference being the colour of the flower from which they are harvested, purple or white.

Chia is loaded with protein, containing 15-24% by volume, but more importantly, unlike almost all other plant food, the protein found in Chia is a complete protein."
